A useful distinction
Cooks working in a different place may encounter different ingredients and suppliers. A substitution can become part of a documented personal or restaurant history. It should not be reduced to a universal claim that one ingredient is always interchangeable with another.
Put it into practice
Look for the speaker’s explanation and date before summarising the change. If adapting a home recipe, record your own substitution and the result separately. Preserve the source recipe so your experiment is not later mistaken for the original historical version.
