A useful distinction
Replacing an ingredient can affect flavour, texture, timing or yield. A pleasant result in one attempt does not demonstrate that the replacement is equivalent in every recipe. Clear notes preserve what you changed and what you actually observed.
Put it into practice
Save the original recipe and add a dated note describing the substitute and quantity. State whether any method changed. Do not imply that an adaptation is the author’s tested version, a historical reconstruction or suitable for every dietary requirement.
